Yummy scrummy mini egg pancakes

It's almost pancake day! Here's one of my favourite pancake recipes, which of course involve mini eggs! It truly is the best time of year, isn't it!


What you need:

  • A microwave-friendly Tupperware or dish

  • A pancake pan, or small frying pan for smaller, thicker pancakes

  • A butterknife, or any cutlery knife will do!


Ingredients:

  • Your favourite pancake mix

  • Hazelnut spread

  • Clotted cream

  • A bag of Mini Eggs


Method

  1. Follow the instructions on your pancake mix (haha!).

  2. In the meantime, put some mini eggs into a microwave-friendly dish and microwave for 10 seconds at a time until you reach your desired softness.

  3. Next, heat up some more hazelnut spread (I usually do this by hovering a spoonful over the gas as I'm cooking my pancakes) then put to one side.

  4. Once your pancakes are ready, lay them flat on a plate and cover one side in hazelnut spread, then roll them like a wrap.

  5. Plate up your pancakes. Then, gently crush your softened mini eggs and sprinkle over the pancakes.

  6. Then, drizzle your melted hazelnut spread over the pancakes. And do the same with the unheated clotted cream...and you're done!
